Pineapple coconut overnight oats can be so easy to make!
Once you make it a few times and decide how to make it to your personal taste, it will be even easier.
I’ve also made coconut overnight oats with orange, blueberries, strawberries, apple cinnamon, peaches, raspberries, mango, and cherries.
It’s pretty much the same recipe, except you switch up the fruit!
So choose your favorite fruit and you just might have your new go-to breakfast.
And by switching up your fruit, it can also be a good way to get some variety in your breakfast too, without feeling like you’re eating the same thing. Even if you are having overnight oats for breakfast every morning.
These pineapple overnight oats use coconut milk (Kerala literally means “land of coconuts”!), but for further variety, you can try this with regular milk or with almond milk too, and with or without yogurt.

What you need for pineapple banana overnight oats
Why chia seeds?
Chia seeds are practically a superfood.
This means that they give a whole lot of nutrients.
It’s really easy to add chia seeds to overnight oats that you might as well add them for the extra benefits!
Fresh or canned pineapple?!
I like to keep things simple. 😉
Canned pineapple just seem more simple. You don’t have to bother with coring the pineapple. 😉
But you can give it a try with fresh pineapple too.

The mashed banana gives this overnight oats a sweeter taste.
The riper the banana is, the sweeter the taste is. If you won’t be using a whole banana, go for the bottom part of the banana for the same reason.
In other overnight oats, I’ve used regular vanilla yogurt to give it a sweeter taste.
But with this pineapple overnight oats I was adding some extra liquid in the form of pineapple juice to give it the extra pineapple flavor.
So I wanted a creamier yogurt to make up for the extra liquid. And I went with Greek yogurt.
You can go for plain or vanilla, depending on how much extra sweetness you want.
If you’ll be using fresh pineapple, you’ll likely want to add something that’ll give it a sweeter taste since you won’t have the pineapple juice from the can.
Maybe:
- Honey
- Vanilla yogurt
- Vanilla extract
- Flavored Greek yogurt
You may consider adding some of these ingredients even if you’re using canned pineapple too.
If you taste it in the morning and find that it’s not sweet enough for you, you can mix in something like vanilla yogurt then too.
Coconut milk or coconut water?
Coconut milk has a thicker consistency, and it has a more powerful taste than coconut water.
Coconut milk also has more calories than coconut water. So if you’re looking to cut down on calories, you may give coconut water a try.
Or, you can also take the coconut milk and add some plain water to it to make a “light” version of coconut milk at home.
I’ll generally add 1/4 – 1/2 cup of coconut milk.
Pineapple orange overnight oats?!
You can also make pineapple overnight oats into a version of orange overnight oats too.
You can get that orange flavor by mixing in some orange juice or some canned mandarin oranges. (Or both!)

- Shredded coconut for toppings
- Mason jars
- Bamboo cutting board (because bamboo is healthier for you – less living bad bacteria on your board – and it’s higher quality)
Here’s how I made my pineapple banana overnight oats
It’s pretty easy really!
STEP 1
Fill a mason jar with all the ingredients:
- 1/2 cup old fashioned oats
- 1 tbs black chia seeds
- 3/4 mashed ripe banana
- 3 slices of canned pineapple, cut into bite size pieces (or around 1/2 cup of pineapple if you’re using canned crushed or diced pineapple, or if you’re using fresh)
- 1/4 cup vanilla or plain greek yogurt
- 1/4 cup pineapple juice from the can
- 1/4 cup unsweetened coconut milk (or 1/2 cup)
Pineapple orange
For pineapple orange overnight oats, also add:
- 1/4 cup – 1/2 cup canned mandarin oranges
- 1/4 cup orange juice, and reduce coconut milk to 1/4 cup
STEP 2
MIX!
STEP 3
Put the mason jar in the fridge for several hours.
STEP 4
